Gluten Recipe

Ingredients

  • 2 medium bananas
  • 2 eggs (room temp)
  • 1/3 cup refined coconut oil (melted and cooled)
  • 1 tsp vanilla extract
  • 1/2 cup raw cane sugar
  • 1 1/2 cups almond flour
  • 1/2 cup tapioca flour
  • 1 tsp baking soda
  • 1/4 tsp pink Himalayan salt
  • 3/4 cup semi-sweet mini chocolate chips
  • 1/2 cup Scamps Toffee Pieces

Ingredients

  • 2 medium bananas
  • 2 eggs (room temp)
  • 1/3 cup refined coconut oil (melted and cooled)
  • 1 tsp vanilla extract
  • 1/2 cup raw cane sugar
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp pink Himalayan salt
  • 3/4 cup semi-sweet mini chocolate chips
  • 1/2 cup Scamps Toffee Pieces

Directions

  1. Preheat oven 350 degrees.
  2. Grease 8.5x4.5 inch loaf pan with coconut oil and line with parchment paper.
  3. In a large bowl mash bananas.
  4. Add eggs then coconut oil and vanilla extract to the bananas and whisk together.
  5. Add sugar and mix.
  6. In a medium bowl, whisk together almond flour, tapioca flour, baking soda and salt.
  7. Add the dry ingredients to the large bowl and mix well.
  8. Fold in chocolate chips and Toffee Pieces.
  9. Pour into prepared loaf pan.
  10. Bake for 55 min (+/-) or until a toothpick in the center comes out clean.
  11. Cool before slicing.
  12. Enjoy!
